Swirled Raspberry Chia Almond Overnight Oats

On Wednesdays Tuesdays we wear eat pink (oatmeal)…

IMG_1631For some reason I am always craving food as soon as the clock strikes 5 – especially when I am at my desk at work. I don’t really understand why my body decides that 5 pm is prime time for a nutritious meal, because we generally eat lunch here around 1 and I almost always need have some kind of snack (fruit) 2-3 hours after that… but the body wants what it wants… and it seems to want to eat dinner at 5 right now (I call it dinner as I don’t really eat much after the gym)

Which is actually quite smart of my body, as I generally try to eat a nutrition-dense snack 1-2 hours before my workout (which is super strenuous most Tuesdays)

After plenty of experimenting last year, I have learned that I do quite well with the oatmeal/nut butter/fruit combo before an intense cardio session, mainly because it isn’t as voluminous a snack as say bananas and nut butter (Yes, sometimes I need more than 1 banana as it doesn’t really satiate me at all anymore, even with a few hard-boiled eggs on the side).

Another great thing about oatmeal as a snack is that it slowly releases energy, which really keeps me going during the 2 hours. Sports suppresses my hunger, so the idea of needing to eat during a workout makes me slightly queasy…. as do 2 bananas and nut butter before a workout but I will just have to deal with that today…(I kind of didn’t make oatmeal for today’s snack because I ran out of nut butter at the apartment and hadn’t brought more for my last week here)

This was my first time experimenting with frozen berries – and it was purely because I had frozen berries to use up in the freezer as I will be moving back to Zürich this weekend! The resulting overnight oats were delicious, so I will definitely be incorporating frozen berries more often… or frozen banana, as I think I might still have some lurking in my freezer (I’ve gone off my protein smoothie habit in Munich as the vegan powders I used to love don’t fill me up enough anymore.. it’s a really weird development but I seem to be craving more whey powder and fish with all the extra sports I’ve been doing, thus haven’t been needing the frozen bananas much!)

Swirled Raspberry Chia Almond Overnight Oats

(serves 1)

Ingredients:

  • 2-4 tablespoons rolled oats
  • 2 tablespoons almond butter
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla
  • enough almond milk to mix
  • as many frozen raspberries as will fit

Directions:

  1. Place all your ingredients into a container (I used an old nut butter jar – I’ve become a MEGA fan of re-purposing jars) and shake it like crazy. (I added my berries after shaking because they weren’t thawed)
  2. Place in jar overnight
  3. Stir to swirl the oats with the (now melting) raspberries on top
  4. Enjoy!

Swirled Cashew and Cocoa Cheesecake Protein Overnight Oats

It tasted like cheesecake. Chocolate cheesecake. *gasp*

It was just the right amount of sweetness and a whopping 25 g of protein without using protein powder.

It’s über-healthy, but you wouldn’t think it at all.

It contains a swirl of my favourite nut butter.

And most importantly:  It kept me going through my 1.5 h workout (and beyond – really filling!) without weighing me down or making me feel sick during cardio Body Step like my beloved dates and almond butter did.

This amazing breakfast or snack was inspired by Deryn’s recipe over at Running on Real Food. I absolutely love her inspirational food philosophy and have bookmarked half of her blog already… it’s awesome – she’s awesome – my recipe here is awesome too 😉 (if I dare say so myself)

Swirled Cashew and Cocoa Cheesecake Protein Overnight Oats

(serves 1)

Ingredients

  • 2 tablespoons rolled oats (up to 5 if serving as breakfast)
  • 1 tablespoon chia seeds
  • 100 g low-fat quark (or Greek yoghurt)
  • 1 tablespoon cashew nut butter
  • 1 tablespoon cocoa
  • up to 1 tablespoon maple syrup
  • dash of milk to make it mixable (I used unsweetened almond milk)
  • optional: 1/2 tablespoon cashew nut butter to serve

Directions

  1. Add all the ingredients into a mason jar (or almost empty nut butter jar), except for the extra cashew nut butter, and stir until well mixed
  2. Store your jar overnight in the fridge
  3. Stir in extra cashew nut butter for extra swirls (not an easy task due to cheesecake-like consistency, but totally worth it)
  4. Enjoy 🙂

Thinking out Loud Thursday: Random Ramblings

I recently skyped with my beautiful Grandmother and noticed how radiant she looked  (seriously Grandma, you looked great 🙂 ). Being the beauty-crazed person that I am, I naturally asked her what she does, what product she uses and how she cares for her basically wrinkle-free skin. I just had to know her secret.. I didn’t want to just rely on “good genes” to keep me looking young for the rest of my life. I was always told you can never start caring for your skin too soon (as I mentioned here) and what could be better than hearing wise words from Grandma?

Well, I didn’t really get the answer to eternal youth that I had expected…

Her beauty secret wasn’t a particular product.. nor was it a treatment… no, dear Granny’s mysterious secret was actual very natural…

BUTTER and SLEEP

You can imagine how I looked at her through the poorly megapixeled camera resolution

Yup.. I was astounded.

Butter. And no, she doesn’t smear it on her face, she includes it in her diet.

I still can’t get over it. It’s too simple to be true…

Her comment got me thinking: If her secret was enough sleep and enough butter, why am I continuously in search for perfect skin care. Am I going about this all wrong?

Day in, day out I am scouting Sephora, department stores and magazines to find the next best thing. I wrote about finishing my eye cream and searching for another, preemptive replacement, possibly wasted spent plenty of my allowance and free time … all in fear of one day looking old.

I then realized, she actually had a point. There has long been a trend to suck fat from unwanted areas and placing it into the face, like in the cheeks, to make the patient look younger. A round, rosy face used to be the ultimate sign of youth and health after all…before cheekbones and size zero became the next big thing…

Thus butter, which basically is fat, tends to have a plushing effect on skin: the more fat the more wrinkle free. Ergo, only skinny people need anti-aging skin care? Or more fat will make you look younger? If that were true I could spend more time resting than at the gym and waaaaay less money spent on products 😉 Oh and I could enjoy much much more of this good stuff:

What I ate Wednesday – Rest Day

I was STARVING yesterday.. all day! Every two hours I felt the need to eat.. I don’t really think the feeling was hunger, but I was receiving queues that I needed to consume food. And not just any food: I wanted CARBS! All the carbs!

I have heard of people generally being more hunger the day after a long run (marathon), but I didn’t run. I did however burn all that I had eaten the day before in my Les Mills classes, which could explain the extreme hunger leading me to eat twice as much as I did the day before. But I embraced it (you are so right, Arman!), despite trying to generally leave more hours between my meals lately…

Today I am feeling a bit “meh”. I’m craving fresh fruit and movement. I’m so grateful I’ve come to a point where I can rely on my “gut” to tell me what I need and what is good for me when it comes to food…

I wish it were more reliable when it comes to people though.. that’s where my “gut feeling” is still letting me down a little, but you live and learn (And that’s another story for another time anyways! 😉 )

So this WIAW is dedicated to finally listening to my cravings, and being proud of being able to do so 😀

Breakfast:

When I woke up I was craving carbs. I didn’t want to open up a new almond milk because I would be back in Zürich for the long weekend, so I didn’t make overnight oats. Big mistake.. I need to get my priorities straight…

I was REALLY craving oat clusters (sadly still haven’t made your delicious-looking recipe (or yours come to think of it)… so I was having an oat-cluster-emergency 😉 )

I ran into the organic store on my way to work and picked up some “KRUNCHY PUR” Oat clusters, chocolate soy milk and cashew nut butter, and happily munched away at my desk. Craving: satisfied!

I later also drank this Carrot Mango juice (my fav combo!)

Lunch:

After my “higher-carb” breakfast, my body was honestly telling my I needed some protein.. and I was craving goat’s cheese! I only get that craving once every few weeks – as I do tend to eat mostly vegan – but when I do really want some goat’s cheese, I generally enjoy every last bit of it 🙂

I was also craving fresh vegetables and tofu so I made a big salad out of carrots, cucumber, tomatoes, mini peppers, fresh goat’s cheese (Chavroux) and Taifun Curry Mango Tofu. I topped it all with Creme of Balsamico and EVOO. YUMM!

Snack:

My salad held me over for about 2 hours before it had me longing for something sweet. I had a few apricots in my bag which I was grateful to find and also finished off the leftover cherry tomatoes.

About an hour later I still wanted more and polished off the rest of the goat’s cheese with some unsweetened, whole grain, spelt animal crackers that I had also bought in the morning. I really needed carbs…

Right before leaving the office I also had 2 handfuls of honey roasted cashew nuts.. my sweet tooth hit again 🙂

(and yes I appear to have snacked every hour of the afternoon… something I’ve been trying to stop, but embraced as necessary yesterday)

Dinner:

After a PR meeting in the evening I met up with a co-worker for froyo. I wasn’t really hungry anymore and was (for the first time ever) happy that my favorite froyo place was closed… shocker I know.

So we went to my favorite café instead.. where they were out of matcha! In protest I ordered a SMALL (not large) rooibos latte with soy milk.

It was ok, and the cute barista (he was there again 🙂 ) agreed with me that matcha tasted better…

I was slightly peckish after and got a small vegetable curry with some avocado on top for dinner and finished off the evening with two squares of Lindt Salted chocolate and some Kamut Crackers. Again with the carbs!

As mentioned before I am super happy to be able to say that I had a successful day of intuitive eating, even though I ate way more than I normally would on a rest day (I generally try to keep those high protein, but that’s not how my body wanted to roll yesterday apparently) 🙂

Now let’s just see what happens today, as 4.5 hours on a train always mean I NEED food. Funny how being trapped in a train makes you think you will starve…!

Coconut Butter!

IMG_0097Remember yesterday when I said I was busy? Well, it wasn’t just the nut butter keeping me on my toes.

IMG_0089At some point in this whole vegan appreciation thing I’ve got going on, I decided I wanted to make homemade everything. Not just the easy stuff like bread and nut butter, but I also desperately wanted to make my own almond milk too (I haven’t made any of things yet, except for the nut butter). To say I’m obsessed is only half of it: Most of the blogs I follow are cooking, fitness and health blogs, and while I am interested in all that, well… life generally just get’s in the way. While I may feel inspired by homemade anything, I just never manage to fit it in to my lifestyle. And don’t even get me started on all the gym workouts I’ve bookmarked over the past few weeks.. I despise the gym and prefer dance, yoga and kickboxing over weights and heavy-duty equipment any day. But why can’t I stop? Why don’t I ever tire of reading things I know I’ll never do? And why don’t I feel attracted to beauty blogs, since I’m obviously a nut in that department too?

Well my friends, if I knew the answer I wouldn’t be asking. Somehow I think I’m just impressed and intrigued by what people achieve in the health/fitness department.. or maybe it’s because I know one day I might find the info I read all those years ago to be useful. Whatever the reasoning, I continue bookmarking and recently, I felt most amazed by coconut butter.

I follow Katie on Chocolate Covered Katie and promise myself daily that I will try to make some of those healthy desserts she writes about one day. Whether it is a time-crunch issue or lack of proper ingredients, that day has yet to come.. Until yesterday; by trying the simplest of her recipes: homemade coconut butter.

I doubted the simplicity of the butter-making process (oh the shame) and researched it on blog after blog after blog until I realised that Katie wasn’t lying.. it really is easy. Nevertheless, I didn’t make it just yet. So what got me to make it yesterday?

IMG_0088Honestly? Well.. the reason I finally made my own was finding coconut butter here in Zurich. And buying it. And cringing at the price. Yet still setting forth in the purchase. And immediately eating half of it.. yup, money is the root of all evil AND the reason to recreate expensive goodies in your own kitchen 😉

Ingredients: 

  • Dried, unsweetened coconut flakes/shavings

Directions:

  1. Place shavings into food processor and blend until it has reached the right consistency.

Mine didn’t get extremely runny, so it didn’t pour into the bowl like many pictures had portrayed on other blogs. It was still creamy though and as delicious as the store bought kind. What’s more it was only 1/6 of the price!

Stock up on those coconut flakes and get processing! I just added a scoop in my morning smoothie and it was delicious and not to mention healthy 😀

Homemade Everything!

You GUYS!

I’ve been SO busy today.

No, not with dancing..nor with beauty product shopping. A little with dog walking, and eating..plenty of that.

As mentioned a couple of times, I am a nut butter freak. Addicted. Obsessed. I eat it with a spoon, out of the jar, in bed. Daily. Multiple times. Multiple spoons.

Yes, it is definitely allowed to be noted that I have more than one problem. So concealers and nail polish aside, just bring on the nut butter – and loads of it.

However, I am NOT in love with the price…

I’ve been bookmarking/pinning/drooling over homemade nut butters these past couple of weeks. It just seems so easy: nuts, and add-ins, dump all in a processor and blend blend blend until it’s butter! This simplicity is not all that attracted me; the price is frugality-worthy too! You just need to invest in the ingredients, and voilà! Nut Butter Time.

Last week I tested the waters with Macadamia nut butter. Leaving it to turn into something unreconizable in the fridge, I was obviously not impressed with the results… But after my shopping bag looked like this:

…I had to give it another shot. Which I did. Today. Did I mention I was busy?

So as I’ve read in a couple of nut butter making posts, I knew it was going to take FOREVER to turn nuts into magical butter. IMG_0079

So I set off blending, expecting only the worst, gruelling next hours. Alas, it took a while… with a bit of processor overheating in between.. Many posts that I read prior to this homemade test run mentioned that certain food processors might not work as well as others. Instantly I assumed this was the case with mine and did not await an extreeeeamly creamy, runny butter to evolve out of todays creation. And it didn’t. But I’ve never liked the runny kind anyways; so win-win!

In admiration of my absolute favourite nut butter I added a few shavings of tonka bean in to the mix. Can you believe I found tonka beans in Zurich?! I just happened upon a jar of them yesterday and could not wait to use them!

Homemade Almond Tonka Bean Nut Butter! 🙂

Ingredients:

  • 1 packet white almonds
  • tiny shaving of a tonka bean
  • half a teaspoon vanilla pod (ground)
  • pinch of salt

Directions:

  1. Place everything in a processor and BLEND until smooth.

Note: 

Do not add any oil, even if it is not blending. It will. Give it time.

Also, if you can’t find any tonka bean, add a little more vanilla as the flavours are similar!

A major round of awwwwwww. These pups are cute, but not as cute as my two doggies. Seeing the video did bring back old memories of when the two were puppies though 🙂

As you can see I have more than one obsession.. I’m a girl with many issues favorite things, and will often share with you what I am currently obsessing about 😀
